The signature offering is the "taste concentration counter" with dividers on both sides. Once your bowl is slid through the curtain in front of you, it's just you and ramen in your own world. Using an order form, you can specify the broth strength, noodle firmness, and even the exact amount of their secret sauce—the Ichiran way of letting you customize your perfect bowl. The smooth, aromatic tonkotsu broth with its signature clean taste pairs with chewy, thin noodles, while their signature sauce glows red in the center of the bowl, whetting your appetite. Once you've tried a kaedama (extra noodles), look for the hidden message that appears on the bottom of the bowl. This is where you can experience authentic ramen culture in Hakata, the ramen capital.
