The original shop of Fukuya (ふくや), where "Aji no Mentaiko" (味の明太子, mentaiko as a developed dish) was born in Nakasu, Hakata. Founder Toshio Kawahara (川原俊夫) invented a unique method of marinating walleye pollack (Atka mackerel) roe in a flavored brine, and generously shared this technique with competitors, allowing mentaiko to grow into Hakata's signature specialty. The main shop stocks a wide variety of mentaiko with different flavor profiles—from the standard regular and mild versions to spicy options—making it fun to compare and choose. Besides gift-wrapped selections, budget-friendly offcuts (pieces) are available for personal use. Walking through Nakasu, bustling with food stalls and dining establishments, this pilgrimage to the origins of mentaiko culture is truly special.
