A historic soy sauce brewery continuing since the Edo period and a symbol of Hiketa's townscape. Known as the sole brewery in Japan still practicing the traditional "straw mat koji method" (むしろ麹製法), where koji is cultivated on straw mats, the building complex with its striking brick-red walls is registered as a Tangible Cultural Property of Japan. The shop offers rich, long-aged soy sauce, fermented soybean paste, and unique soy sauce-based products—ideal for finding souvenirs to cap off your trip. The contrast between the red walls and black tile roof makes a perfect final photo backdrop for your town walk.
