A long-established Chinese restaurant in Kumamoto, known as a leading specialty shop for the soul food Taiping Yan. Taiping Yan has its roots in home cooking from Fujian Province in China and has developed uniquely in Kumamoto, combining the flavors of shrimp, squid, pork, and abundant vegetables in a clear broth, with springy glass noodles instead of wheat noodles and a fried egg on top as a signature element. It's refreshingly light yet satisfying, and is so rooted in local life that it appears in school lunches. The main branch in Shimotōri Arcade has a bright, open atmosphere and is always bustling with shoppers and tourists; you can enjoy not only Taiping Yan but also authentic Chinese side dishes.
Tips
Lines form easily after noon, so coming early before noon from opening is most comfortable. The light broth won't interfere with eating ramen or horse meat sashimi later, making it ideal for the middle of this course. Sets with dim sum are available, but since this is mid-walk, ordering conservatively is wise.
