A popular restaurant serving Izushi's famous plate soba. According to tradition, Izushi soba originated when soba craftsmen moved with the Sengoku clan during the early Edo period after relocation from Ueda in Shinshū. The characteristic feature is serving soba in small white Izushi ceramic plates. Honoring the Izushi soba tradition of 'freshly ground, freshly kneaded, freshly boiled,' the flavorful soba is first enjoyed with dipping sauce alone, then with changing condiments—green onion, wasabi, grated yam, raw egg—one plate at a time. You can add plates beyond the standard serving, so with friends, it becomes a fun competition counting stacked plates. The light, smooth flavor of the soba is so enchanting that you'll find yourself eating 10, 15 plates before you know it. Finish by drinking the soba broth and fully savor Izushi's gourmet delights.
