A long-established miso and soy sauce brewery said to have been founded during the Kaei era, representing the merchant district of Kakunodate's Sotomachi area, which flourished as a merchant town. The symbol is the brick warehouse built during the Meiji period. Inside the fire-resistant warehouse, sliding door paintings created by a local artist remain all around—and amazingly, viewing is free. The shop displays an array of naturally fermented miso and soy sauce, amazake, and pickles including smoked pickled daikon, allowing you to taste and select. This is an experience unique to a brewery. You'll feel the warm bustle of the merchant district, quite different from the refined air of the samurai town. Stocking up on homemade flavors here as the finale to your castle-town stroll means the memory of your journey will return to your dinner table every day.

Tips

About 10 minutes on foot south from the samurai mansion street, located in the Sotomachi merchant district. Viewing the brick warehouse is free. Miso and soy sauce are often heavy bottled items, so an eco-bag is helpful. The location is within walking distance of Kakunodate Station, making it easy to stop by on your way back.
