Furansuya (佛蘭西屋), directly managed by Kamottsuru Sake Brewery, is a restaurant with an attractive storefront facing the brewery street. The signature Bishu Hot Pot is said to have originated from the sustenance meals eaten by brewery workers, and is Saijo's regional hot pot specialty—seasoned with only Japanese sake and salt and pepper, a refreshingly simple approach. As you cook chicken, pork, and seasonal vegetables in Japanese sake and eat your way through, the alcohol evaporates, leaving only the sake's umami to seep into the ingredients. The result is a surprisingly light yet deeply flavorful dish that would only be born in a sake region. On the first floor is a traditional Japanese dining space, while the second floor offers French cuisine—a unique experience only possible at a brewery-managed establishment.

Tips

Weekends at lunch can be crowded, so reservations are recommended. Bishu Hot Pot may be served as a multi-person portion, so group orders are ideal. Be sure to also try the Kamottsuru sake tasting set paired with the hot pot.

Approximately 1 hour 30 minutes. Entering right after opening allows you to enjoy the signature Bishu Hot Pot without waiting
