Nationally renowned as the birthplace of bone-in chicken, this is Marugame's famous specialty restaurant. Marugame bone-in chicken—a whole chicken thigh seasoned with pungent garlic spices and grilled—is soul food that Kagawa is proud of. There are two varieties: "oyadoris" (mature bird) with firm bite and savory richness that floods your mouth with each chew, and "hinadoris" (young bird), which are fluffy and tender—enjoying both is one of the pleasures here. The expert's way to eat it is to dip rice balls in the flavorful chicken fat remaining on the plate. With a bite of the crispy, fragrant skin, the fatigue from your morning historical walk will fade away. A lunch you cannot miss when visiting Marugame.
