Kawara soba, a Yamaguchi specialty said to have originated at Kawatana Onsen, is made by laying tea-flavored soba noodles, beef, shredded egg crepe, and condiments on a heated roof tile and searing them to a fragrant finish. Enjoy the fragrant aroma of the heated tile and the crisp texture of the noodles, ideal for sharing as a family. Fuel up well with this signature dish ahead of the fireworks display.

Tips

Several restaurants in the hot spring town serve kawara soba. It can get crowded in the evening, so visiting a bit earlier is recommended. Since a hot tile is used, watch that young children don't get burned.
