A brewery located in a warehouse within the white-walled town district, producing Yanai's famous sweet soy sauce. This is a 'doubly-fermented soy sauce' (再仕込み醤油)—made by using soy sauce instead of water in a second fermentation—believed to have originated in Yanai and prized as a luxurious delicacy. Legend says a feudal lord who received some exclaimed 'Kanro, kanro!' (sweet dew), giving the product its name. The brewery offers free tours where visitors can marvel at the sight of massive Japanese cedar barrels rising to the ceiling and breathe in the fragrant aroma of the fermenting mash. The shop sells freshly pressed sweet soy sauce and the popular sweet soy sauce soft-serve ice cream with its subtly sweet and savory flavor—a highlight of any food-walking tour.

Tips

Just a short walk from the white-walled district; you can explore on foot while leaving your car parked. Brewery tours are free. Bottled soy sauce can be heavy, so if you're buying as a souvenir, arrange to pick it up at the end of your tour.
