Upon order, each squid is quickly prepared into sashimi right before your eyes. The squid legs still move on the plate, and the flesh is astonishingly transparent. The crispy texture and refined sweetness that fills your mouth are flavors unique to fresh Yobuko squid. After savoring the whole-fish sashimi, the remaining squid legs and ears can be prepared as "second preparation"—deep-fried squid legs for a second round of deliciousness.
